A small batch sugar cookie recipe perfect for two, delivering soft, buttery, and tender cookies with a balance of crisp edges and melt-in-your-mouth centers. Ideal for intimate celebrations like Mother’s Day.

Ingredients

Scale
  • 4 tablespoons (56 grams) unsalted butter, softened
  • 1/4 cup (50 grams) granulated sugar
  • 1 teaspoon vanilla extract
  • 1 large egg yolk
  • 3/4 cup plus 2 tablespoons (110 grams) all-purpose flour, sifted
  • 1/4 teaspoon baking powder
  • Pinch of salt
  • Optional: colored sugar or sprinkles for decoration

Instructions

  1. Cream the butter and sugar: In a medium bowl, beat 4 tablespoons (56 grams) of softened unsalted butter with 1/4 cup (50 grams) granulated sugar until light and fluffy, about 2-3 minutes.
  2. Add vanilla and egg yolk: Mix in 1 teaspoon pure vanilla extract and one large egg yolk. Beat until fully combined and smooth, about 30 seconds.
  3. Sift dry ingredients: In a separate bowl, sift 3/4 cup plus 2 tablespoons (110 grams) all-purpose flour, 1/4 teaspoon baking powder, and a pinch of salt.
  4. Combine wet and dry: Gradually add the dry ingredients to the wet mixture, folding gently with a spatula or mixing on low speed until just combined. Avoid overmixing.
  5. Chill the dough: Form the dough into a flat disk, wrap in plastic wrap, and chill in the fridge for at least 30 minutes.
  6. Preheat oven and prepare baking sheet: Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone mat.
  7. Roll and cut: On a lightly floured surface, roll out the dough to about 1/4 inch (6 mm) thickness. Use cookie cutters to cut shapes, re-rolling scraps carefully.
  8. Decorate: Sprinkle colored sugar or sprinkles on top if desired, pressing gently so they stick.
  9. Bake: Place cookies about 1 inch (2.5 cm) apart on the baking sheet. Bake for 8-10 minutes, until edges start to turn golden and centers look set but soft.
  10. Cool: Let cookies cool on the pan for 5 minutes before transferring to a wire rack to cool completely.

Notes

Softened butter is key—not melted or cold. Chill the dough for at least 30 minutes to prevent spreading and ensure tender cookies. Watch the oven carefully as small batches bake quickly. Store cookies in an airtight container at room temperature for up to 3 days or freeze for up to one month.
