  • 1/4 teaspoon ground cloves

Instructions

  1. Preheat your oven to 350°F (175°C) and line your baking sheet with parchment paper.
  2. In a large bowl, whisk together the flour, baking powder, baking soda, and salt.
  3. In another bowl, cream the butter, granulated sugar, and brown sugar until light and fluffy. Add the egg and vanilla extract, mixing until combined.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until a soft dough forms.
  5. In a small saucepan, combine the pumpkin puree, heavy cream, brown sugar, cinnamon, nutmeg, and cloves. Cook over medium heat, stirring frequently, until thickened (about 5-7 minutes). Let it cool slightly.
  6. Use a cookie scoop or tablespoon to portion out the dough onto the prepared baking sheet. Flatten each ball slightly and create a small well in the center for the filling.
  7. Spoon about 1 teaspoon of the pumpkin pie filling into the well of each cookie.
  8. Bake the cookies for 12-15 minutes, or until the edges are lightly golden. Let them cool on the baking sheet for 5 minutes before transferring to a wire rack.
  9. Let the cookies cool completely before serving or storing.
