A fast and creamy Chicken Marsala recipe that comes together in under 30 minutes, perfect for busy weeknights and family dinners. Tender chicken breasts simmered in a rich Marsala wine and mushroom sauce with a touch of cream.

Ingredients

Scale
  • 4 boneless, skinless chicken breasts (pounded to even thickness)
  • Salt and freshly ground black pepper, to taste
  • 1/2 cup all-purpose flour
  • 2 tablespoons olive oil or vegetable oil
  • 2 tablespoons unsalted butter
  • 8 ounces cremini or button mushrooms, sliced
  • 3 cloves garlic, minced
  • 3/4 cup dry Marsala wine
  • 3/4 cup low-sodium chicken broth
  • 1/2 cup heavy cream
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Place chicken breasts between two sheets of plastic wrap and gently pound to about 1/2 inch thickness. Season both sides with salt and pepper.
  2. Spread flour on a plate and lightly coat each chicken breast, shaking off excess.
  3. Heat 2 tablespoons olive oil and 1 tablespoon butter in a large skillet over medium-high heat. Add chicken breasts and cook 3-4 minutes per side until golden and cooked through (165°F internal temperature). Remove and set aside.
  4. In the same skillet, melt remaining 1 tablespoon butter. Add mushrooms and cook until browned and softened, about 5 minutes. Stir in garlic and cook 30 seconds until fragrant.
  5. Pour in Marsala wine, scraping the pan to lift browned bits. Simmer 2-3 minutes to reduce slightly.
  6. Add chicken broth and bring to a gentle simmer. Reduce by half, about 5 minutes. Lower heat and stir in heavy cream, cooking 2 minutes until sauce thickens.
  7. Return chicken to skillet, spoon sauce over, and warm together 2-3 minutes. Adjust seasoning with salt and pepper.
  8. Garnish with chopped parsley and serve immediately.

Notes

For gluten-free, substitute all-purpose flour with almond flour or gluten-free blend. For dairy-free, use coconut cream instead of heavy cream and olive oil instead of butter. Use dry Marsala wine for best flavor. If sauce is too thin, simmer longer; if too thick, add chicken broth. Chicken thighs can be used but may require longer cooking time.
