These layered strawberry and lemon popsicles are a refreshing and easy summer treat that combines natural sweetness with tangy zest in vibrant red and yellow layers.

  • 1/3 cup granulated sugar (adjust to taste)
  • 1/2 cup water (for strawberry layer)
  • 1/2 cup freshly squeezed lemon juice (from about 2 large lemons)

  • 3 tablespoons granulated sugar (for lemon layer)
  • Pinch of salt (optional)
  • Fresh mint leaves, finely chopped (optional, for lemon layer or garnish)

Instructions

  1. Prepare the Strawberry Layer: In a blender, combine 2 cups hulled and chopped fresh strawberries with 1/3 cup granulated sugar and 1/2 cup water. Blend until mostly smooth but still slightly textured (about 30 seconds). Pour into a bowl.
  2. Prepare the Lemon Layer: In a separate bowl, whisk together 1/2 cup freshly squeezed lemon juice, 1/2 cup water, and 3 tablespoons sugar until the sugar dissolves completely. Optionally strain through a fine mesh sieve to remove pulp. Add a pinch of salt if desired.
  3. Layering: Pour a thin layer of the strawberry puree into each popsicle mold (about 1 to 2 tablespoons per mold). Freeze for 30-40 minutes until just firm to the touch but not completely frozen.
  4. Add Lemon Layer: Once the strawberry layer is set, carefully pour in the lemon mixture (about the same amount as the strawberry layer). Return the molds to the freezer for another 30-40 minutes until firm.
  5. Repeat Layers: Alternate between strawberry and lemon layers until molds are filled, finishing with a strawberry layer on top. Generally, 3 to 4 layers work well depending on mold size. Freeze the popsicles for at least 4 hours or overnight for best results.
  6. Unmolding: To release the popsicles, run warm water over the outside of the molds for 15-20 seconds. Gently pull the sticks out while holding the mold tight.

Notes

Patience is key to keep layers distinct; let each layer freeze until firm but slightly tacky before adding the next. Use fresh fruit for best flavor and texture. Run warm water on molds briefly to ease unmolding. Sugar can be substituted with honey, agave, stevia, or monk fruit sweetener. Adding coconut milk or Greek yogurt to the strawberry layer creates a creamier texture.
