These frozen watermelon margarita popsicles are a quick, easy, and delicious summer treat combining juicy watermelon, fresh lime, and tequila for a refreshing boozy snack.

Ingredients

  • 4 cups watermelon, cubed and seeds removed
  • 1/4 cup fresh lime juice (about 2 limes)
  • 1/2 cup tequila blanco
  • 2 tablespoons agave syrup or honey
  • 2 tablespoons orange liqueur (optional)
  • A pinch of salt
  • 1/4 cup water (optional)

Instructions

  1. Cube about 4 cups of fresh watermelon, removing as many seeds as possible.
  2. Add the watermelon cubes to a blender along with 1/4 cup fresh lime juice, 1/2 cup tequila blanco, 2 tablespoons agave syrup, 2 tablespoons orange liqueur (optional), and a pinch of salt.
  3. Blend until smooth but not overly pureed, aiming for a slightly pulpy texture.
  4. Taste and adjust sweetness or lime juice as needed. Add up to 1/4 cup water if mixture is too thick.
  5. Pour the mixture into popsicle molds, leaving a small space at the top for expansion. Tap molds gently to remove air bubbles and insert popsicle sticks.
  6. Freeze molds for at least 6 hours or overnight until fully firm.
  7. To unmold, run warm water over the outside of the molds for 10-15 seconds and gently pull on the sticks before serving.

Notes

Use ripe watermelon for best flavor and natural sweetness. Do not over-blend to keep a fresh texture. Freeze immediately after pouring to avoid icy texture. For a non-alcoholic version, omit tequila and orange liqueur and add extra lime juice or soda water. Adding a pinch of chili powder or fresh mint leaves before freezing adds a nice twist. Sprinkle coarse salt or chili powder on popsicles before serving for extra flavor.
