Refreshing Frozen Watermelon Mint Mojito Popsicles

These watermelon mint mojito popsicles are a quick, easy, and refreshing homemade summer treat inspired by the classic mojito cocktail, perfect for cooling down on hot days.

Ingredients

  • 4 cups (600g) seedless, chopped watermelon
  • 1/2 cup (about 15g) fresh mint leaves, packed
  • 1/4 cup (60ml) fresh lime juice
  • 2 tablespoons (25g) granulated sugar
  • 1/4 cup (60ml) water
  • 2 tablespoons (30ml) white rum (optional)
  • Fresh mint sprigs for garnish

Instructions

  1. Cut about 4 cups (600g) of seedless watermelon into chunks and remove any seeds.
  2. Place fresh mint leaves and granulated sugar in a small bowl and gently muddle to release oils without shredding the leaves.
  3. In a blender or food processor, combine watermelon chunks, muddled mint and sugar mixture, fresh lime juice, and water. Blend until mostly smooth but still slightly textured.
  4. If using, add white rum and pulse a few times to mix evenly.
  5. Pour the mixture into popsicle molds, leaving a small gap at the top. Add a fresh mint sprig to each mold.
  6. Insert wooden sticks and freeze for at least 4-6 hours or preferably overnight until solid.
  7. To unmold, run warm water over the outside of the mold for a few seconds and gently pull the sticks to release the popsicles. Serve immediately or store in a freezer-safe container.

Notes

Do not over-muddle the mint to avoid bitterness. Use ripe, juicy watermelon for best flavor. If popsicles freeze too hard, let sit at room temperature for 2-3 minutes before serving. Alcohol lowers freezing point, so popsicles with rum may take longer to freeze. Store popsicles in airtight containers or wrap individually to prevent freezer burn.
