  • 1 cup fresh or frozen strawberries (hulled and sliced)
  • 1/2 cup pure cranberry juice (unsweetened if possible)
  • 2 tbsp sugar (optional, depending on sweetness of berries)
  • 3 cups freshly squeezed lemonade (about 6 lemons)
  • 1/4 cup sugar (adjust to taste)
  • 1/2 cup cold water
  • 1 cup fresh or frozen blueberries
  • 1/2 cup blueberry juice or blueberry-flavored sparkling water
  • 2 cups sparkling water or club soda, chilled
  • Ice cubes (preferably large to slow melting)
  • Fresh mint leaves and extra berries for garnish

Instructions

  1. Prepare the Red Layer: In a blender, combine the strawberries, cranberry juice, and sugar. Blend until smooth. Strain through a fine mesh sieve to remove seeds and pulp. Pour the mixture into your punch bowl or pitcher, filling about one-third of the container. Set aside in the fridge to chill for about 10 minutes.
  2. Make the White Lemonade Layer: In a separate bowl, mix the freshly squeezed lemon juice, sugar, and water until the sugar dissolves completely. Chill this mixture in the fridge as well. Before layering, gently stir in the sparkling water to add fizz but be careful not to overmix.
  3. Prepare the Blue Layer: Blend blueberries with blueberry juice or blueberry-flavored sparkling water until smooth. Strain to remove skins and seeds. Chill this mixture until cold.
  4. Layering the Punch: Once the red layer is chilled and slightly thickened, carefully pour the white lemonade mixture over the back of a spoon held just above the red layer. Pour slowly to fill the next third of your vessel.
  5. Repeat the same technique to add the blue layer on top of the white, again using the back of a spoon for a gentle pour.
  6. Final Touches: Add ice cubes on top if desired, and garnish with fresh mint leaves and whole berries. Chill the punch for another 10 minutes before serving to let the layers set perfectly.

Notes

Pour each layer slowly over the back of a spoon to maintain distinct layers. Chill each layer before assembling to keep separation. Use large ice cubes to slow melting. Leftover punch can be stored in the fridge for up to 24 hours but layers may blend over time. For a spirited version, add vodka, gin, or white rum to the lemonade layer.
