Savory Blackstone Smash Burgers Recipe with Caramelized Onions

A quick and easy smash burger recipe cooked on a Blackstone griddle featuring juicy patties with a crispy crust and sweet caramelized onions. Perfect for casual gatherings and busy weeknights.

  • 1 pound (450g) ground beef (80/20 blend)
  • Salt and freshly ground black pepper, to taste
  • 2 medium yellow onions, thinly sliced
  • 2 tablespoons unsalted butter
  • 1 tablespoon vegetable or canola oil
  • 4 cheese slices (American or cheddar recommended, optional)
  • 4 soft burger buns (brioche or potato buns recommended)
  • Pickles, sliced
  • Condiments such as ketchup, mustard, or mayo

Instructions

  1. Heat 2 tablespoons unsalted butter in a skillet over medium-low heat. Add thinly sliced yellow onions and a pinch of salt. Cook slowly, stirring occasionally, until onions turn deep golden brown and smell sweet, about 25-30 minutes. Set aside.
  2. Divide ground beef into 4 equal portions (about 4 ounces or 115g each). Gently roll each into a loose ball without overworking the meat.
  3. Preheat Blackstone griddle to medium-high heat (around 400°F / 204°C). Brush with 1 tablespoon vegetable oil.
  4. Place each beef ball on the hot griddle. Using a metal spatula, press down firmly to smash into a thin patty about 1/4 inch (6mm) thick. Hold pressure for 10-15 seconds to develop a crispy crust. Do not move patties yet.
  5. Sprinkle salt and black pepper over each patty immediately after smashing. Cook for 2-3 minutes until edges are brown and crispy.
  6. Flip patties carefully with spatula. Place a cheese slice on each patty if using. Cook for another 1-2 minutes until cheese melts and burger is cooked through.
  7. Move patties aside and place burger buns cut-side down on the griddle. Toast for about 1 minute or until lightly golden.
  8. Spread condiments on buns as desired. Place cheesy patty on bottom bun, top with caramelized onions, add pickles if desired, then top bun.
  9. Serve immediately while hot and crispy.

Notes

Use fresh, cold beef and handle gently to keep burgers tender. Preheat griddle well for best crust. Season patties after smashing, not before. Caramelize onions low and slow for 25-30 minutes. Keep cooked patties warm in a low oven if making multiple batches. Resist pressing patties after flipping to retain juiciness.
