  • 2 cloves garlic, minced
  • 12 jalapeños, diced
  • 1 can (10 oz) diced tomatoes with green chilies (e.g., Rotel)
  • 16 oz Velveeta cheese, cubed
  • 1 cup shredded sharp cheddar cheese
  • ½ cup milk
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • Salt and pepper to taste
  • Fresh cilantro, chopped (optional, for garnish)
  • 2 green onions, thinly sliced (for garnish)

Instructions

  1. Heat a large skillet over medium-high heat. Add ground beef and cook, breaking it up with a spoon, until no longer pink and starting to brown, about 7 to 10 minutes. Drain excess fat if necessary, leaving a little for flavor.
  2. Add diced onion, minced garlic, and diced jalapeños to the skillet. Cook until onions are translucent and softened, about 3 to 5 minutes.
  3. Stir in ground cumin, chili powder, salt, and pepper. Add the canned diced tomatoes with green chilies. Mix well and simmer for 2 minutes to combine flavors.
  4. In a medium saucepan over low heat, combine Velveeta cubes, shredded cheddar, and milk. Stir gently and continuously until cheese is melted and smooth, about 5 to 6 minutes. Avoid high heat to prevent clumping.
  5. Pour the cheese sauce into the skillet with the beef mixture. Stir until evenly combined and heated through, about 3 minutes.
  6. Transfer dip to a serving bowl. Garnish with chopped cilantro and sliced green onions. Serve immediately with tortilla chips or preferred dippers.

Notes

If dip thickens after resting, stir in a splash of milk to loosen. Melt cheese slowly over low heat to avoid clumping. For a smoky twist, add smoked paprika or chipotle powder. Can be kept warm in a slow cooker on low.
