  • 2 cups vegetable or chicken broth (480 ml)
  • 1 tablespoon miso paste
  • 2 tablespoons plain Greek yogurt (or coconut yogurt for dairy-free)
  • 1 tablespoon soy sauce
  • 1 teaspoon sesame oil
  • 1 clove garlic, minced
  • 1 teaspoon fresh ginger, grated
  • 2 stalks green onions, sliced
  • 1 soft boiled egg (optional)
  • Chili flakes (optional, to taste)

Instructions

  1. Prepare your ingredients: mince the garlic, grate the fresh ginger, and slice the green onions thinly. If using a soft boiled egg, boil for 6-7 minutes, peel, and set aside.
  2. Bring 2 cups (480 ml) of vegetable or chicken broth to a gentle boil in a medium saucepan.
  3. Add the instant ramen noodles and cook according to package instructions, usually about 3 minutes, stirring occasionally to prevent clumping.
  4. While noodles cook, whisk together miso paste, Greek yogurt, soy sauce, and sesame oil in a small bowl until smooth.
  5. Once noodles are nearly done, stir in minced garlic and grated ginger into the pot and cook for about 30 seconds.
  6. Lower heat to medium-low and slowly whisk the creamy mixture into the pot with noodles and broth. Stir gently until the broth turns silky and slightly thickened.
  7. Taste the broth and add more soy sauce if needed. For heat, sprinkle in chili flakes. Remove from heat once blended and hot but not boiling vigorously.
