A smoky, spicy, and creamy buffalo chicken dip featuring smoked cream cheese and crispy bacon, perfect for game nights and parties.

Ingredients

Scale
  • 8 oz smoked cream cheese (225 g), softened
  • 2 cups cooked shredded chicken (300 g)
  • 1/2 cup buffalo hot sauce (120 ml)
  • 6 slices thick-cut bacon, cooked crisp and crumbled
  • 1/2 cup sour cream (120 ml)
  • 1 cup shredded cheddar cheese (100 g)
  • 1/2 cup shredded mozzarella cheese (50 g)
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 2 tbsp fresh chives, chopped (optional)
  • Black pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cook the bacon in a skillet over medium heat until crispy, about 8-10 minutes. Transfer to a paper towel-lined plate to drain, then crumble once cool. Alternatively, bake bacon on a sheet pan at 400°F (205°C) for 15-20 minutes.
  3. In a large bowl, combine the softened smoked cream cheese, sour cream, and buffalo hot sauce. Stir until smooth and creamy.
  4. Fold in the cooked shredded chicken until fully coated.
  5. Sprinkle in garlic powder, onion powder, and black pepper to taste. Mix gently.
  6. Add shredded cheddar and mozzarella cheeses and stir until evenly combined.
  7. Transfer the mixture to an 8×8-inch (20×20 cm) baking dish and spread into an even layer.
  8. Sprinkle the crumbled crispy bacon evenly over the top, reserving some for garnish.
  9. Bake for 20-25 minutes until bubbly and golden on the edges.
  10. Remove from oven, garnish with fresh chopped chives and reserved bacon crumbles. Let cool for 5 minutes before serving.

Notes

If the dip is too thick before baking, add a splash of milk or extra buffalo sauce to loosen it. If too runny, add more shredded cheese. Use full-fat smoked cream cheese for best texture. Bacon can be baked in the oven as a less messy alternative. The dip can be assembled ahead and refrigerated unbaked for up to 24 hours; add bacon topping before baking. Leftovers keep well refrigerated for up to 3 days and can be reheated in the microwave or oven.
