Simple Italian Pasta Recipe with Garlic Olive Oil Sauce

A quick and easy Italian pasta dish with a fragrant garlic olive oil sauce that’s comforting and delicious.

  • 12 oz spaghetti, linguine, or any long pasta
  • 1/3 cup extra virgin olive oil
  • 68 cloves fresh garlic, thinly sliced
  • 1/2 teaspoon red pepper flakes (adjust to taste)
  • 2 tablespoons fresh parsley, chopped
  • Kosher or sea salt, to taste
  • 1/4 cup grated Parmesan cheese (optional)

Instructions

  1. Bring a large pot of salted water to a boil. Cook the pasta according to the package instructions until al dente. Reserve about 1 cup of pasta water before draining.
  2. While the pasta is cooking, heat the olive oil in a large skillet over medium heat.
  3. Add the sliced garlic to the skillet and sauté gently. Stir frequently to avoid burning—aim for a light golden color and fragrant aroma (about 2-3 minutes).
  4. Sprinkle in the red pepper flakes and stir for an additional 30 seconds to release their flavors.
  5. Reduce the heat to low and carefully add about 1/2 cup of the reserved pasta water to the skillet. Stir to combine and let it simmer gently.
  6. Toss the cooked pasta into the skillet with the sauce. Use tongs to coat each strand evenly.
  7. Add the chopped parsley and toss again. Taste and adjust seasoning with salt if needed.
  8. If desired, sprinkle grated Parmesan cheese on top before serving.
