These playful homemade gummy bears combine real strawberries and champagne for a sweet, bubbly treat perfect for parties and celebrations. Soft, chewy, and bursting with authentic flavor, they’re easy to make and always a crowd-pleaser.

  • 1 cup (150g) fresh strawberries, hulled and chopped
  • 1/2 cup (120ml) champagne or sparkling wine
  • 1/4 cup (60ml) water
  • 23 tablespoons (25-35g) granulated sugar (or coconut sugar)
  • 2 tablespoons (18g) unflavored gelatin (or 2 teaspoons agar-agar powder for vegetarian/vegan)
  • 1 tablespoon (15ml) lemon juice
  • 1 teaspoon (5ml) champagne extract (optional)
  • Natural food coloring (optional, few drops)

Instructions

  1. Add hulled, chopped strawberries to a blender or food processor and puree until smooth.
  2. Pour the puree through a fine mesh strainer into a bowl, pressing out liquid and discarding seeds/pulp.
  3. In a small saucepan over low heat, combine strawberry puree, champagne, water, sugar, and lemon juice. Stir gently and heat until warm but not boiling (about 3-4 minutes).
  4. Sprinkle gelatin evenly over the warm mixture. Let bloom for 1 minute, then whisk until fully dissolved and liquid is clear (2-3 minutes). Add champagne extract and food coloring if using.
  5. Remove from heat. Using a dropper or small spoon, fill gummy bear molds with the mixture. Place molds on a baking sheet for stability.
  6. Chill molds in the refrigerator for at least 90 minutes, or until gummy bears are firm and springy.
  7. Gently unmold bears. Serve chilled and enjoy!
  8. For vegetarian/vegan version: Simmer agar-agar in the liquid for 5 minutes before pouring into molds.

Notes

For best results, use ripe strawberries and bloom gelatin properly. Do not boil the mixture to preserve champagne flavor. Mist molds lightly with water before filling for easy unmolding. For vegan/vegetarian, use agar-agar and simmer for 5 minutes. Adjust sweetness to taste before pouring into molds. Store in airtight container in fridge up to 1 week or freeze up to 2 months.
