  • 1 tsp baking powder

  • ½ cup (115g) unsalted butter, softened
  • ¾ cup (150g) granulated sugar
  • 2 large eggs, room temperature
  • ½ cup (120ml) sour cream or Greek yogurt
  • 1 tsp vanilla extract
  • 1 cup (250g) crushed pineapple, drained
  • 1 cup (120g) powdered sugar
  • 23 tbsp pineapple juice
  • ½ tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan and set aside.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
  3. In a large bowl, cream the softened butter and sugar using a hand or stand mixer until light and fluffy—this should take about 3-4 minutes.
  4. Add the eggs, one at a time, beating well after each addition. Mix in the sour cream and vanilla extract.
  5. Gradually add the dry ingredients to the wet ingredients, mixing just until combined. Avoid overmixing to keep your bread tender.
  6. Fold in the drained crushed pineapple using a rubber spatula. The batter will be thick and slightly chunky.
  7. Pour the batter into the prepared loaf pan and smooth the top with your spatula.
  8. Bake for 50-55 minutes, or until a toothpick inserted in the center comes out clean. Keep an eye on the bread during the last 10 minutes to avoid overbaking.
  9. Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  10. For the glaze, whisk together the powdered sugar, pineapple juice, and vanilla extract until smooth. Drizzle over the cooled bread and let it set for 10-15 minutes. Slice and enjoy!
