Tender Slow Cooker Honey Balsamic Pot Roast

  • 34 pounds chuck roast
  • 2 tablespoons olive oil
  • Salt and black pepper to taste
  • 1 large yellow onion, sliced
  • 4 medium carrots, peeled and cut into chunks
  • 2 celery stalks, chopped
  • 4 garlic cloves, minced
  • 1/3 cup (80 ml) balsamic vinegar
  • 3 tablespoons honey
  • 1 cup (240 ml) beef broth
  • 1 teaspoon dried thyme
  • 2 bay leaves
  • 1 tablespoon Worcestershire sauce (optional)

Instructions

  1. Pat the chuck roast dry with paper towels and season all sides generously with salt and pepper.
  2. Heat olive oil in a large skillet over medium-high heat. Sear the roast on each side for 3-4 minutes until a deep brown crust forms.
  3. Slice the onion, peel and chunk the carrots, chop the celery, and mince the garlic.
  4. Spread the onions, carrots, and celery evenly in the bottom of the slow cooker. Scatter the minced garlic on top.
  5. Place the seared chuck roast on top of the vegetable bed in the slow cooker.
  6. In a bowl, whisk together balsamic vinegar, honey, beef broth, dried thyme, bay leaves, and Worcestershire sauce.
  7. Pour the honey-balsamic sauce evenly over the roast and vegetables.
  8. Cover and cook on low for 8-9 hours or on high for 4-5 hours until the meat is fork-tender and shreddable.
  9. About 30 minutes before serving, taste the sauce and adjust seasoning with salt and pepper if needed. Remove bay leaves.
  10. Lift the roast carefully, slice or shred as desired, and spoon the sauce and vegetables over the top. Serve warm.

Notes

Searing the meat before slow cooking is recommended for better flavor and texture. If the sauce is thin after cooking, simmer it uncovered on medium heat for 5-10 minutes to thicken. Slice the roast against the grain for the most tender bites. Adjust Worcestershire sauce for gluten-free needs or omit. You can also cook in a Dutch oven at 325°F for 3-4 hours as an alternative.
