A hearty and comforting casserole with creamy ranch sauce, juicy pork chops, tender potatoes, and gooey cheese. Perfect for busy weeknights or cozy family dinners.

Ingredients

Scale
  • 4 pork chops (bone-in or boneless, about 1-inch thick)
  • 4 russet potatoes, peeled and sliced thinly (about 1/8 inch thick)
  • 1 packet ranch seasoning mix or homemade ranch seasoning
  • 1 cup heavy cream (or substitute half-and-half or milk)
  • 1 cup chicken broth
  • 1 cup shredded cheddar cheese (use sharp cheddar for maximum flavor)
  • 2 tablespoons butter, melted
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Optional: diced onions, chopped parsley for garnish, paprika, cooked bacon bits

Instructions

  1. Preheat the oven to 375°F (190°C) and grease a 9×13-inch casserole dish lightly with cooking spray or butter.
  2. In a mixing bowl, whisk together the ranch seasoning mix, heavy cream, chicken broth, and garlic powder until smooth.
  3. Season both sides of the pork chops with salt, pepper, and garlic powder. Brush them lightly with melted butter.
  4. Arrange the sliced potatoes in the bottom of the greased casserole dish, overlapping slightly. Sprinkle a pinch of salt and pepper over the potatoes.
  5. Place the seasoned pork chops on top of the potato layer, ensuring they don’t overlap.
  6. Pour the prepared ranch sauce evenly over the pork chops and potatoes, ensuring everything is coated well.
  7. Cover the dish tightly with aluminum foil and bake for 40 minutes.
  8. Remove the foil, sprinkle the shredded cheddar cheese over the top, and bake uncovered for an additional 10-15 minutes, or until the cheese is melted and bubbly.
  9. Ensure the pork chops are cooked through (internal temperature of 145°F/63°C) and the potatoes are tender. If needed, bake for an extra 5 minutes.
  10. Let the casserole rest for 5 minutes before serving. Garnish with chopped parsley if desired.

Notes

[‘Bone-in pork chops are more flavorful, but boneless will work if that’s what you have.’, ‘Try to keep your potato slices uniform in thickness for even cooking. A mandoline slicer works well.’, ‘Covering the casserole for the first part of baking helps the sauce infuse into the pork and potatoes without drying out.’, ‘If the sauce seems too thick, add a splash of chicken broth or milk before pouring it over the casserole.’, ‘Mix in mozzarella or Parmesan with the cheese topping for a different flavor profile.’]
