  • 2 slices sourdough or thick-cut white bread
  • 1/2 cup sharp cheddar cheese, shredded
  • 1/2 cup Gruyère cheese, shredded
  • 1/2 cup low-moisture mozzarella cheese, shredded
  • 2 tablespoons freshly grated Parmesan cheese (optional)
  • Pinch of kosher salt

Instructions

  1. Shred all cheeses—cheddar, Gruyère, mozzarella, and Parmesan—and mix them together in a bowl.
  2. Spread softened butter evenly on one side of each bread slice.
  3. Heat a nonstick skillet over medium-low heat for about 2 minutes.
  4. Place one slice of bread, butter-side down, onto the skillet. Sprinkle a generous layer of the cheese mixture on top.
  5. Top with the second slice of bread, butter-side up.
  6. Cook for 3-4 minutes on the first side, pressing gently with a spatula to ensure even cooking. The bottom should turn golden brown.
  7. Carefully flip the sandwich using your spatula. Cook for another 3-4 minutes, pressing lightly.
  8. Once both sides are golden brown and the cheese is melted and gooey, remove the sandwich from the skillet.
  9. Let it rest for a minute before slicing it in half. Serve immediately.
