  • 2 tablespoons all-purpose flour
  • 1 cup low-sodium chicken or vegetable broth
  • 1 cup heavy cream
  • Pinch of nutmeg
  • Salt and black pepper, to taste
  • 1 cup crispy fried onions

Instructions

  1. Preheat the oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish.
  2. Bring a large pot of salted water to a boil. Add the green beans and cook for 3-4 minutes until crisp-tender. Drain and plunge into an ice bath to stop the cooking process.
  3. In a large skillet, melt butter over medium heat. Add the mushrooms and garlic, cooking until softened and fragrant, about 4-5 minutes.
  4. Sprinkle the flour over the mushroom mixture and stir to combine. Cook for 1-2 minutes to remove the raw flour taste.
  5. Gradually whisk in the broth and heavy cream. Add a pinch of nutmeg, salt, and pepper to taste. Cook for 5-7 minutes, stirring frequently, until the sauce thickens.
  6. Add the blanched green beans to the skillet and toss to coat evenly with the sauce.
  7. Transfer the green bean mixture to the prepared baking dish. Spread it out evenly and top generously with crispy fried onions.
  8. Place the dish in the preheated oven and bake for 25-30 minutes, or until the top is golden brown and the sauce is bubbling.
  9. Let the casserole sit for 5 minutes before serving to allow the flavors to meld.
