These no-bake peanut butter granola bar bites are quick, easy, and made with simple pantry ingredients. They’re the perfect grab-and-go snack for lunchboxes, road trips, or late-night cravings.

  • 2 cups (180g) rolled oats
  • 1 cup (240g) creamy peanut butter
  • 1/2 cup (170g) honey
  • 1/2 cup (90g) mini chocolate chips
  • 1/4 cup (30g) chopped almonds
  • 1/4 cup (20g) unsweetened shredded coconut (optional)
  • 1/4 teaspoon sea salt
  • 1 teaspoon vanilla extract

Instructions

  1. Line an 8×8 inch baking dish with parchment paper, leaving overhang on two sides.
  2. In a large bowl, combine peanut butter and honey. Microwave for 20-30 seconds if needed. Stir until smooth. Add vanilla extract and sea salt; stir again.
  3. Add rolled oats, mini chocolate chips, chopped almonds, and shredded coconut (if using). Stir until evenly coated and mixture is thick and sticky.
  4. Transfer mixture to prepared pan. Press down firmly and evenly using the back of a spatula or damp hands.
  5. Refrigerate for at least 30 minutes, or up to 1 hour, until firm.
  6. Lift block out using parchment overhang, place on cutting board, and slice into bars or squares.

Notes

Press the mixture firmly into the pan to prevent crumbling. For cleaner slices, chill for at least 30 minutes. If mixture is too dry, add a tablespoon of honey or milk. If too sticky, add more oats.
