  • 1/2 cup shredded mozzarella cheese

Instructions

  1. Soften the cream cheese by leaving it at room temperature for 30 minutes or microwaving for 10-15 seconds on low power.
  2. In a small bowl, combine softened cream cheese, mayonnaise, garlic powder, onion powder, salt, and pepper. Mix until smooth.
  3. Lay a large tortilla flat on a cutting board. If stiff, warm in microwave for 10 seconds wrapped in a damp paper towel.
  4. Spread a thin, even layer of the cream cheese mixture over the entire tortilla, leaving a 1-inch border around the edges.
  5. Place 2-3 slices of turkey over the cream cheese, overlapping slightly. Add spinach leaves if using.
  6. Sprinkle a generous handful of shredded cheddar and mozzarella evenly over the turkey.
  7. Starting from one edge, roll the tortilla tightly without tearing, using fingers to tuck and compress as you go.
  8. Place the rolled tortilla seam-side down on plastic wrap, wrap tightly, twisting the ends like a candy wrapper. Refrigerate for at least 30 minutes (1 hour is better).
  9. Unwrap the chilled roll and slice into 1-inch rounds using a sharp knife with a gentle sawing motion.
  10. Arrange pinwheels cut-side up on a plate or in a lunchbox. Serve immediately or store for later.
