  • 1 tablespoon granulated sugar
  • 1 packet (2 ¼ teaspoons) active dry yeast
  • 1 cup (240ml) warm water
  • 2 tablespoons olive oil
  • 2 tablespoons minced garlic
  • 2 tablespoons finely chopped fresh herbs (parsley, thyme, rosemary)
  • 1 cup (100g) shredded mozzarella cheese
  • ¼ cup (25g) grated Parmesan cheese
  • 2 tablespoons unsalted butter (melted)

Instructions

  1. In a large mixing bowl, whisk together flour, salt, and sugar.
  2. In a small bowl, combine yeast with warm water and let sit for 5 minutes until frothy.
  3. Gradually add the yeast mixture and olive oil to the dry ingredients. Mix until a shaggy dough forms.
  4. Turn the dough onto a lightly floured surface and knead for 8-10 minutes until smooth and elastic.
  5. Place the dough in a lightly oiled bowl, cover with a clean kitchen towel, and let it rise in a warm place for 1 hour or until doubled in size.
  6. Preheat the oven to 375°F (190°C).
  7. Roll out the dough into a rough rectangle and sprinkle evenly with mozzarella, Parmesan, garlic, and fresh herbs.
  8. Roll up the dough tightly into a log and pinch the seams to seal. Place the log seam-side down on a greased baking sheet.
  9. Cover with a towel and let it rise again for 30 minutes.
  10. Bake for 25-30 minutes until the bread is golden brown and sounds hollow when tapped on the bottom.
