  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • ¾ cup (170 g) unsalted butter, softened
  • ¾ cup (150 g) packed brown sugar
  • ¼ cup (50 g) granulated sugar
  • 2 large eggs, room temperature
  • 2 teaspoons pure vanilla extract
  • 1 cup (170 g) milk chocolate chunks or chips
  • 2 cups (about 100 g) mini marshmallows

Instructions

  1. Preheat your oven to 350°F (175°C). Line a 9×13 inch baking pan with parchment paper, leaving an overhang on the sides.
  2. In a large bowl, whisk together the flour, baking soda, and salt. Set aside.
  3. In a separate bowl, beat the softened butter, brown sugar, and granulated sugar with an electric mixer until light and fluffy, about 3 minutes.
  4. Beat in the eggs one at a time, then add the vanilla extract. Scrape down the sides to combine evenly.
  5. Gradually add the dry ingredients to the wet ingredients, mixing on low speed just until combined. Avoid overmixing.
  6. Gently fold in the milk chocolate chunks with a spatula.
  7. Spread the dough evenly into the prepared pan, pressing into corners and edges.
  8. Bake for 18-20 minutes until edges are golden and center is slightly soft.
  9. Remove from oven and immediately sprinkle mini marshmallows evenly over the warm cookie base.
  10. Return to oven and bake for another 5-7 minutes until marshmallows puff up and turn golden brown. Watch closely to prevent burning.
  11. Let the bars cool completely in the pan on a wire rack. Use the parchment overhang to lift out and cut into squares or rectangles.
